Squash & Sweet Potato Soup

Delicious served with cheese on toast
~ serves 4

1 butternut squash, peeled & chopped
2 sweet potatoes, peeled & chopped
1 onion, finely chopped
2 tsp ground coriander
3 pints vegetable stock
1 bayleaf
Black pepper

Heat a little oil in a large pan, add the onion, fry for 5 mins or until softened. Add the coriander and bayleaf and fry for few seconds. Next, add the squash, sweet potatoes and the vegetable stock. Season with black pepper and bring to the boil. Simmer for 20 mins until the vegetables are tender. Remove from heat and blend until smooth.
