Spiced Cabbage

Full of goodness and packed with spicy flavours

Serves 4

1 Savoy cabbage , finely shredded
2 cloves garlic, crushed
1 onion, chopped
70g sultanas
1 tsp cumin seeds
1 tsp ground coriander
1 tsp mustard seeds
1 tsp garam masala
600ml vegetable stock
1 butternut squash (700g) peeled & diced
2 red chillies, deseeded & finely chopped
2tbsp sunflower oil

Heat the oil in a large pan, fry the mustard and cumin seeds until they start to pop, add onion & garlic fry for 5 minutes until softened. Add the squash, sultanas, coriander, garam masala, and pour over the stock. Cook for 10 minutes. Add the cabbage, chillies and cook for further 10 minutes.

Serve as a side dish or as a main with rice.

Tip ~ you can vary this dish to suit your taste - try using potatoes, sweet potatoes are good instead of the butternut squash.
