Pumpkin Dip

Pumpkins and squashes just love to soak up spices and other aromatics, which makes this dip taste delicious!

600g Pumpkin or Butternut squash flesh
6 tbsp Olive oil
1tsp Harissa
1 clove garlic, peeled & crushed to a paste
1tsp ground Coriander
sea salt & Black pepper
juice of 1 lemon

Steam the pumpkin/squash flesh for 15 mins until just tender.Transfer to a bowl and coarsley mash,and combine with the olive oil, lemon juice, harissa, garlic ground coriander, sea salt & pepper.Transfer the mixture to a clean bowl and drizzle with a little more olive oil and scatter over some chopped coriander to serve.

Serve with Tortillas cut into strips, Olives, and cubed sharp cheeses.
