Enjoy a slice of Grandma's fruit loaf

8oz self-raising flour
4oz butter
4oz caster sugar
1 large egg, beaten
2oz currants
2oz sultanas
20z glace cherries, quartered
4-5 tbsp milk
grated rind of 1 lemon
handful flaked almonds

Preheat the oven- 180C/350F/ gas mark 4
Grease a 2lb loaf tin and line base with greased-proof paper.
Put the flour in a bowl and rub in the butter. Add lemon rind and sugar, mix together.
 Add the fruit and mix to a firm dropping consistency with egg and 4 tbsp milk, add extra if needed.

Place the mixture in the tin, smooth the top with a back of a spoon and sprinkle over flaked almonds.Pop in the centre of the oven and bake for 1  to 1 1/2 hours until firm. Test with a skewer, if it comes out clean the loaf is cooked. Cool on a wire rack.
