A nice creamy soup that's full of flavour, and really easy to make, this is one of Mossy's favourite soups.
1tbsp Vegetable oil
1 Onion, sliced
225g /8 oz Potatoes,cubed
2 medium Leeks, sliced
1.2 litres /2pt vegetable stock
150ml /5 floz Double cream
Salt & black pepper
Heat the oil in a large pan. Add onions, potatoes and leeks, cook for about 3-4 minutes until softened. Add the vegetable stock, and bring to the boil. Season well and simmer until the vegetables are tender.
Whizz the soup in a blender or use a hand-held stick blender, and blend until smooth. Reheat the soup and stir in the cream. ~ Serve the soup in warmed bowls, sprinkled with fresh chives, and served with plenty of lovely crusty bread on the side!
