Cannellini Bean & Vegetable Soup

Cannellini Bean & Vegetable
This is a really filling comforting soup, perfect for those chilly days!
~ Serves 4

25g butter
2 leeks, sliced
2 large potatoes, peeled & chopped
2 broccoli heads, cut into small florets
1/4 white cabbage,shredded
1.5 litres vegetable stock
2 tsp caraway seeds
410g can cannellini beans, drained

Melt the butter in a large saucepan and saute the leeks for 5 mins until soft.
Add the potatoes and caraway seeds, fry for couple of minutes then pour in the veggie stock, bring to the boil, add the cannellini beans and simmer for 15 mins.
Add the broccoli florets and the shredded cabbage and cook for further 5 mins. Serve in warmed bowls along with with some french bread topped with a little melted Gruyere cheese.
