Spicy Parsnip Soup

~ Serves 4

2 tbsp vegetable oil
2 onions, chopped
2 cloves garlic, chopped
2 sticks celery, chopped
1-inch piece ginger, finely chopped
8 parsnips, peeled & roughly chopped
1 tsp ground cumin
1 tsp turmeric
1.1 litre vegetable stock
Cumin seeds to garnish

Heat oil in a large pan, add the onion and cook 5 minutes until softened, add the celery, garlic and ginger and cook for a further 5 minutes. Add the parsnips and cook for 5 minutes, then add the spices and mix well to coat the vegetables. Pour over the stock and bring to boil, then reduce heat. Cover and simmer for about 20 - 25 minutes. Whizz up with hand blender or use a food processer, to a smooth consistency. Sprinkle over a few cumin seeds to serve, and enjoy with
some crusty bread.
