Spiced Mackerel & Tomato Salsa

Grilled whole mackerel with warming spices, served with tomato salsa salad.
 Serves 4

4 whole mackerel
Olive oil
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander

Slash each mackerel three times on either side.
Heat 1 tbsp of olive oil in a small pan and add the spices, cook for a couple of minutes. Brush the spiced oil over the mackerel. Heat the grill and cook the fish for 7-8 minutes on either side until cooked through.


Serves 4

8 tomatoes, finely chopped
1/2 red onion, finely chopped
1/2 cucumber, deseeded & finely chopped
2 tbsp fresh mint, chopped
3 tbsp fresh coriander leaves, roughly chopped
2 tsp chilli powder
juice of 1 lime
2 tbsp olive oil

In a bowl, toss together tomatoes, onion, cucumber, mint & coriander. Season with a little salt and freshly ground black pepper. In  clean jam jar, mix chilli powder, lime juice and olive oil. Shake well, then pour over salad and stir to mix.
