Spiced Carrot & Lentil Soup
A lovely warming soup for those chilly days!
~ Serves 4
600g Carrots, washed & coarsely grated
140g split red lentils
2 tbsp olive oil
2 tsp Cumin seeds
pinch dried Chilli flakes
1 litre hot vegetable stock
To Serve ~ Natural Yogurt, 2tbsp chopped Corainder, Naan breads.
Heat a large saucepan and dry-fry the cumin seeds and chilli flakes for 1 minute or so until they start to release thir aromas. Scoop out about half the spices and set aside. Add the oil to the pan and add the carrots, lentils, stock & milk. Bring to the boil, then simmer for about 15 mins or until the lentils are soft.
Whizz the soup with a stick blender or in a food processor until smooth, season to taste. Serve with a dollop of yogurt, and a little coriander, sprinkle over the reserved spices and serve with warmed naan bread.
