Fairy Cakes

A Fairy Cake is a small cake in a paper case, designed just for one. :)
Kids will enjoy helping to make these sweet little cakes.


Makes 12

4oz butter, softened
4oz caster sugar
4oz self-raisng flour
2 eggs, beaten
Bun cases


Icing & Decoration

8oz icing sugar
2-3 tbsp warm water
Choose from - hundreds & thousands, glace cherries, chocolate strands or other sweets you may like.


Preheat the oven 190C/375F/Gas Mark 5.
Put the bun cases into  12-cup shallow bun tin.

Put the butter and sugar into a large mixing bowl and cream together with a wooden spoon or electric mixer, until pale and fluffy. Gradually add the eggs, beating well after each addition. Fold in flour lightly using a metal spoon.

Divide the mixture evenly between the bun cases. Pop them in the preheated oven to bake for 15-20 minutes, until they feel springy to the touch. Remove and Cool on a wire rack.


For the icing ~ Put the icing sugar in a bowl and gradually blend in the warm water until you have a fairly stiff icing. Spread the icing over the fairy cakes and decorate as desired. Have fun and get creative!
 

Tip ~ the flowers and petals of violas and pansies are pretty used as decoration on top of fairy cakes too.
