Bread Sauce

An old-fashioned accompaniment to a roast dinner.

No Christmas dinner table is complete without it!

Serves 8-10

1 onion, peeled
4 cloves
115g / 4oz fresh white breadcrumbs
55g /2oz butter
salt & pepper
600ml / 1pt milk
1 bay leaf

Stud the onion with the cloves, then place in a saucepan with the milk, breadcrumbs, bay leaf and butter. Bring to just boiling point, over a low heat. Remove from heat and leave to stand in a warm place to infuse.Just before serving, remove the onion and cloves and reheat the sauce gently, beating well with a wooden spoon. Season to taste with the salt & pepper. Serve with a little grating of nutmeg.
