Banana Bread

BANANA BREAD
~ Serves 12

4oz /100g butter
4oz /100g brown sugar
1 large egg
8oz /225g plain flour
2 level tsp baking powder
pinch salt
2oz / 50g Sultanas or Raisens
1/2 tsp ground nutmeg
2 large ripe bananas

Greased 2lb/1kg loaf tin.
Preheat the oven - 350F/180C/gas 4

Cream the butter and sugar until the mixture is light and fluffy. Add the egg and beat well. Sift the flour, baking powder, salt & nutmeg into a bowl. Peel and mash the bananas. Beat in the flour mixture and banana in alternate spoonfuls, then fold in the sultanas, turn the mixture into the loaf tin. Bake the bread in a moderate oven for 1 to 1 1/4 hours until golden brown. Test with a skewer, if it comes out clean the bread is cooked. ~Serve cut into slices and buttered.

Store ~ This bread freezes well. Wrap it in foil when its completely cold and store in the freezer. Eat within 4 months.
