GINGER BEER SODA
Serves 4

250g fresh Ginger, peeled & thinly sliced
Zest & Juice of 1 unwaxed Lemon
200g golden caster sugar
1 litre Soda Water

In a saucepan, add the ginger, lemon zest and sugar and pour over just enough water to cover. Bring to the boil slowly until the sugar has dissolved, then boil rapidly until syrupy.Remove from heat and leave to cool.
Using a sieve, strain the ginger mixture into a jug and add the soda water and lemon juice to your taste. Chill before serving into glasses with lemon slices.


 

ICED TEA
serves4

3 Earl Grey Teabags
2 tbsp runny Honey
1 lemon, sliced
Juice of 1 lemon
2 cinnamon sticks, broken in half
Ice cubes

Put the teabags into a large heatproof jug (I find a Cafetiere is good) and pour over 1 litre of boiling water. Leave to brew for about 3 mins then remove the teabags.Stir in the honey, lemon juice, lemon slices and cinnamon sticks. Cover and chill for few hours. When ready to serve half fill tumblers with ice cubes and pour over the chilled tea.


RASPBERRY LEMONADE
This is a delicious ruby-red reviver!
serves4

200g Raspberries
125g golden caster sugar
juice of 4 lemons
750ml Sparkling water,chilled
Mint leaves

Whizz the raspberries, sugar & lemon juice together in food processer(or use stick blender) until smooth. Press through a metal sieve into a jug to remove the seeds.When ready to serve, stir in the sparkling water and serve into tumblers  adding a few mint leaves.


LEMONADE

Put 175g caster sugar and 200ml hot water into a pan and heat gently, stirring until the sugar has dissolved. then cool. Meanwhile, juice 20 lemons and pour into a jug. Add 2/3 of the sugar syrup, 2 sprigs of mint, 3 handfuls ice cubes. Check for sweetness. Add the remaining syrup.

* For a change make Limeade just replace the Lemons with Limes.


 

ICED COFFEE
Serves 2

Make 250ml Strong Espresso-style coffee.Then add 2 tablespoons Sugar whilst hot and stir until dissolved. Add 250ml Milk and 1 tablespoon Camp Coffee Essence. Serve in a glass with a scoop of vanilla Ice Cream
or blend with a couple of handfuls of Ice for a frozen frappe.



PIMM'S
A traditional English summertime drink.
Put one part Pimm's into a jug of ice along with three parts of either ginger ale, lemonade or soda. Add some curls of cucumber peel, some sliced lemons and a few sprigs of mint, stir well, serve and enjoy!
