Spiced Lentil & Potato Ragout

A Warming Vegetarian Dish
Serves 4

1tbsp oil
1 onion,chopped
1 garlic clove, crushed
500g potatoes, peeled & cut into chunks
3 large carrots, peeled & cut into chunks
200g puy lentils
1 litre vegetable stock
400g can chopped tomatoes
2 tbsp tomato puree
110g spinach
1 tsp of each - cumin & coriander
1/2 tsp of each - cinnamon & turmeric



Heat the oil in a large saucepan, add the onion and garlic, fry until softened. Add the spices and fry for further minute. Add the potatoes,carrots & lentils,stirring to coat in the onion and spices. pour in the stock and add tomatoes and tom puree. Bring to the boil, cover and simmer for 20 -25 minutes or until lentils and vegetables are cooked. Season to taste, remove from heat and stir in the spinach.

 Serve with some warmed naan breads.
