Spiced Apple Puddings

I love these little apple puds. Served in their own individual dishes, they are such a treat. I 'm sure we could all find a little room to enjoy one of these tasty puds!   
 

 Serves 4

4 Ramekin dishes, buttered


FILLING
3 cox's apples (or similar) peeled, cored & chopped
15g butter
1-2tbsp caster sugar
2tbsp water
1/2tsp ground cinnamon


FOR SPONGE
85g self-raising flour
85g caster sugar
85g butter
1 large egg
1tsp vanilla extract
Whipped cream to serve


Heat the oven 180C/ 350F/ Gas Mark 4.
Put the apples into a saucepan with the (15g) butter, cinnamon, 1-2tbsp sugar and  the water, cook gently for 5 minutes until the apples are soft. Spoon into the ramekin dishes.

Whisk together the self-raising flour, butter, caster sugar, egg and vanilla extract until smooth, then spoon over the apples and bake for about 20- 25 minutes, until the sponge is golden and springy to the touch.

To serve, dust over a little icing sugar and serve with a spoonful of whipped cream.


* Try adding 2tbsp Brandy / Rum instead of the water to the apples during cooking, for a more special pud!
