Kippers are a traditional English breakfast dish, often served with a poached egg. They may be grilled, fried or jugged.

To ensure the whole house does not reek of fish, the best cooking method is to jug them. This is the traditional way of serving kippers. Cut the heads and tails off the kippers, put them in a tall jug and cover with boiling water, making sure the kippers remain upright. Cover the jug with a plate and leave for about 5-10 minutes. Drain well and serve with a pat of butter.
 

To grill kippers ~ place them on a grill pan and dot with a little butter, cook for ~ Whole kippers 2 minutes either.  Fillets 1 - 1 1/2 minutes either side.

Serve the kippers with brown bread and butter.
