Herb-Crusted Salmon

HERB-CRUSTED SALMON ~ with vine roasted tomatoes
A great one-pan recipe
Serves 4


Heat the oven 190C/ Gas mark 5/ 375F
 

Olive oil
4 salmon fillets
4 strands of cherry tomatoes
40g fresh white breadcrumbs
2 tbsp finely chopped flat-leaf parsley
1 tbsp finely chopped fresh thyme
1 clove garlic, crushed
1 tbsp parmesan, grated
sea salt & black pepper

 

Put the cherry tomatoes on the vine into a roasting tin and drizzle with olive oil.  Mix together the breadcrumbs, chopped flat-leaf parsley, chopped fresh thyme, garlic, and  parmesan. Season well - sea salt & freshly ground blackpepper, and combine with 2 tbsp olive oil. Press the crumb mixture over the salmon fillets and then place the salmon on top of the cherry tomatoes. Pop the tin into the oven and roast for 20 -25 minutes until the salmon is cooked and the crumb is lovely and golden.

Serve with potatoes of your choice.
