Fish Pie

FISH PIE
An old recipe that my Grandma would make dinner.  My favourite too. Lovely comfort food.
Serves 2

1lb filleted haddock or cod, skinned & cut into chunks.
1 tablespoon lemon juice
2oz butter - for mashing & dotting
Salt & Pepper
1lb Potatoes (weighed after peeling)

For the SAUCE
1oz butter
1oz plain flour
3oz grated  cheese
1/2 pint liquid = fish liquor made up with milk

To GARNISH
2 or 3 tomatoes, skinned & sliced
A little melted butter

Preheat oven to 190C/375F/Gas 5
Lay the fish in a greased, ovenproof shallow dish, to fit in a single layer. Sprinkle over lemon juice, salt and pepper and dot with butter. Cover with foil and cook in oven for 10 - 15 minutes or until cooked.

Meanwhile, cut the peeled potatoes into small chunks and boil until soft. Drain and mash with butter. Season well with salt and pepper.
 
When fish is cooked spoon off the liquor into a measuring jug and add milk to make up the quantity to 1/2 pint.

NOW MAKE THE SAUCE.
In a small saucepan, melt the butter, add the flour and cook for 1 minute. Add salt & pepper, stir in liquid. Bring to the boil, stirring, and simmer for 2 minutes. Beat in the cheese, do not let the sauce boil again. Pour the sauce over fish. Spoon or pipe the potato around the edge of the fish. Arrange the tomato down the centre. Brush the potato and tomato with melted butter. Place the dish under a grill to tinge the potato golden.

* PEELING TOMATOES ~ make a cross in the skin on the bottom of each one, then plunge into boiling water for 15 seconds, remove and then drop them into cold water. The skins will peel off nicely.
