Cream of Onion Soup

A lovely creamy soup that's perfect on a cold Winters day. Quick and easy to prepare. Serve it with a hunk of your favourite cheese and some crusty bread.
Serves 4

30g butter
600g onions, finely sliced
1 litre vegetable or chicken stock
100ml single cream
1 tbsp plain flour
1/2 tsp dry mustard powder
Salt & Pepper
Nutmeg
Chives (for garnish)

Heat the butter in a saucepan and cook the onions, with the mustard, over low heat, until they are soft, but not brown. Sprinkle the flour into the onions, mixing well with a wooden spoon. Add the stock, and bring to the boil, stirring continuously, then simmer for 25-30 minutes. Stir in the cream and grate in a little nutmeg, add salt & pepper to taste. Sprinkle the soup with chives to garnish, before serving.
