Cranberry Sauces

CRANBERRY AND ORANGE SAUCE
Serves-6-8

450g Cranberries
125g Brown sugar
zest & Juice of 3 Oranges

Put all the ingredients into a small pan and simmer gently for about 10-15 mins, until cranberries are soft, stirring occasionally. Best served hot, this sauce can also be served cold with cold meats and ham.
 


CRANBERRY, APPLE & GINGER SAUCE.
Serves 8

225g Bramley apples (or similar)peeled, cored & chopped
50g Caster sugar
225g Cranberries
2 tbsp cider or apple juice
6 whole cloves
1 inch piece of ginger,grated

Put all ingredients into a pan and cook,covered for about 10 - 15 mins, stirring occasionally until the apples have softened and the cranberries begin to burst. serve hot or cold.

BOOZY CRANBERRY SAUCE.
Serves 6-8

450g Cranberries
150ml Port
100g caster sugar
Zest & juice of 1/2 orange
Cinnamon stick
300ml water

put all ingredients into a small pan, bring to the boil and simmer for 10- 15  mins, stirring occasionally, until cranberries are soft and begin to burst.


CRANBERRY & RED ONION SAUCE
Serves 8-10

3 large red onions, sliced
450g/1lb whole cranberries
250ml/9fl oz red wine
125g/4oz demerara sugar
3 tbsp vegetable oil

In a large pan, cook the onions and sugar in the oil for about 15 mins until the onions have caramelised. Add the cranberries and the wine.Sean with salt & black pepper. Bring to the boil and simmer for 10-15mins until the cranberries are tender.
