Chunky Tomato Pasta Sauce

This is a really simple chunky tomato sauce that goes so well served over any pasta.

The tomatoes are roasted which intensifies their flavour.

Serves 4

3 tbsp olive oil
1  red onion, halved
5 gloves garlic, peeled
2 red peppers, quartered
350g ripe tomatoes
400g dried spaghetti
8 tbsp fresh basil, chopped
8 tbsp fresh parsley,chopped


Preheat the oven to 220C/425F/GAS 7

Put the onion and olive oil in a large roasting tin and roast for 10 mintes. Add the garlic, tomatoes and the peppers. Season well and roast for further 25-30 minutes until all the vegetables have softened and are lightly charred.

Meanwhile, cook your pasta according to the pack instructions, reserving a little of the cooking water.
Place the roast vegetables in a food processor (or use stick blender) and whizz for about 30 seconds to make a thickly textured sauce, check your seasoning and stir in the herbs. If the sauce is to thick just add a little of the reserved water from the pasta. Pour the sauce over the cooked pasta and combine well. Serve with a drizzle of olive oil and some freshly grated parmesan.
