Cabbage & Pearl Barley Pot

A hearty meat-free dish

Serves 4

1 onion, finely chopped
2 cloves garlic, finely chopped
4 carrots,roughly chopped
1 savoy cabbage or other dark green cabbage, thinly sliced
1 tbsp olive oil
225g / 8oz pearl barley
1.7 litres / 3 pints vegetable stock
pinch chilli flakes
squirt tomato puree

Heat the oil in a large saucepan, add the onion and cook for a couple of minutes, until soft, add the garlic and stir. Season with sea salt & freshly ground black pepper. Add the carrots and cook for about 2 minutes, then stir in the tomato puree and add the cabbage. Pour in the hot stock and add the pearl barley, bring to the boil, then reduce heat and simmer gently for about 20-30 minutes. Add more water if needed. Sprinkle in the chilli flakes and season to taste, if required.
